Adobo
Adobo is the closest thing to a national dish in the Philippines, consisting of seared and browned chunks of meat, seafood, fruit, or vegetables mixed with vinegar or soy sauce, bay leaves, garlic, salt, and black pepper. The combination of these ingredients is left to simmer over low heat, resulting in succulent, juicy, and tender ingredients covered in thick, rich, and savory sauce.

Sinigang

With its sour lightness perfectly matching the harsh tropical heat of the country, sinigang is a unique soup that is a true representative of Filipino cuisine.



Bulalo

It is believed that this simple, comforting, and flavorful soup is the best when the meat is so tender that it falls off the bone.






Lechon Kawali

It is one of the most famous Filipino dishes eaten throughout the country. Always served hot, lechon kawali is usually accompanied by spicy vinegar sauce or a traditional lechon liver sauce on the side.



Dinuguan

This thick, flavorful stew is usually served alongside rice or rice cakes and can be enjoyed as a nutritious breakfast and a hearty lunch or dinner.





Kare-Kare

Over the years, the dish has evolved, so some cooks like to add chilis or green papaya for an extra kick, although the traditional kare-kare sauce should ideally be devoid of seasonings, spices, and chilis. Regardless of the origins of kare-kare, it is still a favorite dish among the natives.


Turon

It is usually sold by Filipino street vendors and enjoyed as a sweet snack or a satisfying dessert.






Bistek

Bistek Tagalog or the Filipino beef steak is a delicious blend of salty, sour, and sweet flavours. Thinly sliced beef is marinated in a mixture of mainly soy sauce and kalamansi, fried, and then topped with caramelised onions. The onions are just sweet enough to cut into and balance the strong salty and acidic tastes infused into the meat.


Kaldereta

Kaldereta is a Filipino beef stew made extra rich and tasty by tomato sauce and liver paste. Goat meat can also be used in place of beef and mixed in is a merrymaking of vegetables, which typically include carrots, bell peppers, and potatoes.
